Hi ,I know how to jet a carb by trial and error but how is this done with a turbo setup without damage from going lean?

I always just start with something I know is way too big and work my way down.

And get a wideband sensor!
Weld a bung in the exhaust and get that lambda sensor to tell you if its going lean!
