A stock center mount(braced by heat riser, case stud) rarely moves, so one uses the stock crush gaskets and it works great. Anything dual you are likely going to need to remove a few times (get the engine into compartment or spark plugs out) over its life time, I would use the thick quality paper type.

It is application dependent.
Yeah some may call it overkill, but you can't have too much overkill.

I never use any gaskets, just loctite 518 and have never had a failure.

Metal for stock, fiber/paper for duals. I smear the paper type with SuperLube on either side, let it soak in a moment, and wipe off the excess. I find that this keeps them "fresh" for a very long time, and they never stick to the head or manifolds anymore this way.
