Recommended Tuning Shops Near Sacramento CA?

Gonna be building up a 1956 as soon as my case and heads get back from the shop and I want to get a good tune on it from someone who knows what's what more than I do. (I can get a decent tune on it to get by but I'd like it to be more precise) Anyone know any shops in or near Sacramento that are good?

Also how many miles should I put on a new motor before spending money on a fine tune?

I thought I saw a post on here a couple weeks ago recommending a guy in Sac but I didn't bookmark it and can't find it now of course
