What would be an ideal optimum curve to shoot for in a 1972 Westy hardtop with the following setup?

Bosch SVDA (timed @ 28 full 7 initial)

Weber 40mm IDF's (47.5 idles, 125 mains, F11 tubes, 190 air corr. 28mm vents) LM-2 tuned
002 Trans 3-rib stock gearing
Hankook 185R14's

you might try the type 4rum for engines as it might get a little more traffic to get you an answer.

Those are a lot of expensive parts to trust to a mechanical distributor. Not sure why you'd want to do that when you could make your own advance curve.
Crank-trigger eliminates all of that timing scatter, opens up a few hp, and you will be able to run more advance. It's well worth paying a couple hundred more and spending an extra day learning how to set up a programmable system.
