Ok thanks.... Lots of info here! I've been picking the brains of the local motorcycle specialty shops that are near my home. I'm getting some descent info from the guys there and they seem to be inspired once they grasp what I want to do. After looking at e-bay for used moto/wave runner ITBs, there are so many choices which leads to more questions.
I do have a budget, but I also have a time frame. That being said.... Maybe my best plan of action would be to go with a readily available VW manifold based throttle body for my first FI build. Yes the ITB is very appealing, but might be a bit to chew on the first go around. I'll definitely keep my eyes peeled for another build though(I have a '66 square that deserves a FI system as well).

Definition of annoying:
I cut the tubular SS rails for the waverunner TBs in half (TIG welded fittings one each end) and had two sets of two.
(There is another style that are cast (aluminum? SS?) that MIGHT work, but I KNOW the fabbed tubular setups can be cut/welded and such)
One set is on the car. (same spacing as stock T4, using rails and pico injectors with factory manifolds)
One set is resting, sealed up comfortably in a ziplock bag, in the bottom of a box.

So I'm now debating making new rails to use the ITBs I was considering putting on this weekend.

zero vehicles on jackstands, square gets a fresh 090 and 1911, cabby gets a blower.
EZ3.6 Vanagon after that.(mounted, needs everything finished) then Creamsicle.

Yeah Pile, I hear that.... I played hell after moving from CA to TN and finding all the VW parts I'd stockpiled. I hate spending money on stuff I know I have but can't find.
