I don't know too much about plugs, besides they are attached to the wires and they make a spark. As far as type, brand, material, etc, are there any you can recommend for my application?

Plugs are cheap.

Well, come to find out I had a major brain fart at the beginning of my wiring escapade. You would think after wrenching on air cooled VWs for close to two decades I would know what the damn firing order was. So needless to say, all my injector and coils were wired incorrectly 
Nonetheless, I took the time and redid them all, and things are a little neater than they were the first time, and now wired correctly. I also picked up a new set of NGK R plugs, and will be throwing them in tomorrow.
The best part was, just before turning in for the night, I ran the ignition test on tuner studio, and sure enough, I now have spark to my plugs.
Hopefully noooooow I can drive this girl under her own power tomorrow.

It's a fight every step of the way. Apparently NPT threaded barbed fittings can't go into the CBPerformance fuel rails. Everyone of mine is leaking, and I have tightened them as much as possible.
About to roll this project in the creek behind my house...feel like I would be accomplishing more doing that.

Permatex Anerobic Thread Sealant with Teflon may be your friend.(#565, 567 heat cures in ~1 hour at 200F)
..Unless they were supposed to be O-ring boss (ORB) with an ISO thread.
On the NPTs the threads must seal.
On an ORB, they don't have to. The o-ring does.
Many "AN" fittings use ORBs on the non-AN side.
Addendum to Newtons first law:
zero vehicles on jackstands, square gets a fresh 090 and 1911, cabby gets a blower.
EZ3.6 Vanagon after that.(mounted, needs everything finished) then Creamsicle.

I have had great luck with Loctite 567.
Unless CB has changed their design, the fuel rails are NPT.
Don't get discouraged, I have spent years working the bugs out of my EFI turbo setup. Remember that most of this is uncharted territory.

Since they mandated the lead out of the brass you are going to have a little more difficulty getting them to seal.
I used regular paste style Permatex pipe thread sealant and haven't had any troubles.

Thanks for the suggestions fellas. And sorry for the droopy post...was just getting frustrated.
Anyway, i torqued the poop out of the brass fittings, and they have pretty much stopped leaking. I picked up the permatex that was suggested, and will be applying that eventually.
So I fired her up and after doing some TB adjustments, it idles!!
Messed with the ignition and fuel mapping a little (I have a looooong way to go) and drove it about a mile down the road and back. I still have very little idea what I'm doing. If I had to describe the drive, I would say it feels like a turd over 2500rpm. Had to downshift to get up a small hill, and just didn't have any GO uphill.
There is so much that I am happy about today, that I'm not complaining, but I have some work to do.
...I would show you my log and MSQ, but have no idea how to attach them.

You can always post screen shots of fuel and ignition maps, that usually tells a pretty good story too.

You can zip up msqs and short logs.
For windows I suggest installing 7-zip, works from right click menu and can deal with almost anything.

At this point, no. I didn't know there was any pipe sealant that would hold up to gas. I picked up the anaerobic permatex that was suggested, and will be applying that. The Fella at your hydraulic store is high. Teflon tape works well with fuel. It's one of very few things that stands up to e85 in my experience. It has proven to be nastier than gas from what I've seen.
Take it apart and fix it before you drive it again. High pressure fuel leaks are no joke. Hopefully you didn't damage your fuel rails by over tightening...

Also received my MAT sensor in the mail and installed that last night. Next up on the agenda is getting the beetle legal again...its been sitting in the garage so long, registration kinda expired.
And another problem I just noticed is that my crank pulley is a bit wonky when its turning, which is weird because the only thing that changed was removing the original pulley screw and adding in the crank trigger wheel and the longer pulley screw provided by CBPerformance. Figured I should get this in order before putting too many miles on it.
