44 idf issues and introduction

Hi all,
Long time lurker first time poster, ive been into vw's as long as i can remember, spent a lot of my younger days camping with the family in a mid 60's Baja all up and down the Queensland coast Australia, I now have a Baja myself it has giving me problems for a while, i didn't build the engine but i have pulled it apart to find out what was inside, i discovered it was only running 7.1;1 compression ratio with the use of cylinder shims and copper head gaskets i have removed them and now are running 9.3;1 ratio much better, i also honed the barrels and installed a new set of rings while i was there, the problem i have is a massive use of fuel and it feels like its down on power. It is 2007cc, 44 idf's ,9.3;1 comp, 110 cam,
32 mm vents, 55 idle, F11 emulsion, 175 Air, 55 accel, 135 mains. What would you all recommend as far as carb set up, ive done a lot of searching and reading but still haven't come up with a answer.

Im following this one. I have been thru my carbs and never seem to get them just right

I would highly recommend a wideband O2 gauge and sensor, would show you how rich you are and help you jet accordingly.

Check the fuel pressure first, no more than three psi tops they run great as low as two psi.
