Prevent fouling of intake and exhaust gasket surfaces?

I just finished cleaning off rust, gasket remnants, and general crud from the manifold mating surfaces of the heads on a 1600 that I am freshening. It was a good bit of work and, although I used a mild abrasive, I am afraid that it is going to ruin the flatness of the surfaces. Is there any way to prevent this junk from building up again? Would anti seize on the exhaust surface help or hurt?

It all really depends upon what gasket and sealant was used. Some gaskets might even be able to get by without using anything. Aks a builder what they use. They would know what works and what doesn't.
